Coquito is similar to egg nog. It is a traditional Puerto Rican holiday drink that will surely become a favorite! This recipe was given to Guillo by our cousin Maria del Carmen (Mary)
8 egg yolks (pasteurized if possible)
¾ cup sugar
one 14 oz can coconut milk
one 14 oz can sweetened condensed milk
one 12 oz can evaporated milk
2 cups (or more, depending on your taste) dark rum
2 tsp. vanilla extract
1 tsp. ground cinnamon
Beat sugar and egg yolks together until they form a pale yellow ribbon.
Add all the liquid ingredients. Add cinnamon then adjust to your own taste.
Mix well and refrigerate.
Served cold is best.
