Capellini with Calamari and Shrimp

INGREDIENTS

1/2 cup chopped walnuts
1/2 cup extra- virgin olive oil
2 large garlic cloves, minced
1 1/2 cups chicken stock
1 can (14 ounces) Italian peeled tomatoes, drained and chopped
1 1/2 teaspoon of oregano
1/2 teaspoon of salt
1/4 teaspoon of freshly ground black pepper
1 pound of capellini
10 ounces of cleaned squid, sliced into thin rings
1/2 pound of large shrimp, shelled, devained and cut into thirds
1/4 teaspoon of hot red pepper

PREPARATION

  1. In a large skillet, heat the olive oil and add the minced garlic. Stir in the chicken stock, tomatoes, wine, parsely, oregano, salt and black pepper. Bring to a boil and let it simmer until it has reduced to 1/2 of original amount, or about 8 minutes. In the meantime, cook the pasta in salted water.
  2. Add the squid and the shrimp to the sauce until barely cooked through, about 3 minutes.
  3. Serve the sauce over the pasta. Sprinkle with the walnuts.
