Receta de Titi Tati
Celebramos el cumple de Api con este cheesecake que le hizo Titi Tati en San Juan.

No bake mango cheesecake
Serves 20
Preparation time 30 minutes
Chill for at least 5 hours


CRUST

15 shortbread cookies
2 tbsp melted butter

FILLING

1/2 large ripe mango
8 oz cream cheese
1 ½ cups mango nectar
2 tbsp lemon juice
2 ½ tbsp unflavored gelatin
½ cup cold water

TOPPING
½ large ripe mango
1 tbsp. almonds
Cherries
Mint leaves

PREPARATION

Coat an 8” spring pan with butter

Grind cookies with butter and spread over bottom of the spring pan

In a blender or food processor mix the cream cheese, mango, mango nectar and lemon juice until smooth

Mix the gelatin with water and dissolve over heat until it is clear

Add to the mango mix

Pour mix over crust

Refrigerate until firm

Before serving remove sides of the pan and arrange diced mango and almonds over cheesecake .
