For the dough:
Purchase frozen pie crusts or start from scratch as follows:
2 cups flour
1 butter stick
1 tbsp. Crisco shortening
1 tbsp sugar
4 tbsps of cold water
1 egg yolk
Mix all of the ingredients until they form a dough. Place it in the freezer for 20 minutes, or for 2 hours in the refrigerator following these intructions:
In a big bowl start with the shortening and the butter. Both should be cold. Add the 2 cups of flour at once. Mix these ingredients well. Add the salt and the sugar and mix well. Then add the 4 tbsps of water. Roll the dough with your hands until it no longer sticks to the bowl. Place it in the freezer for 20 minutes.
Once you take the dough out of the freezer, split it in half. Place the dough on top of waxed paper, and roll it with a rolling pin. Roll the dough from the center out using even firm rolls. Turn the dough as you work, about an eighth of turn for each roll will help to keep it round. It is again important to work as quickly as possible and not to overhandle the dough. Do this with both halves.
Lightly cover the pie pan with butter. Once the dough has been rolled out transferr one of the two crusts to the pie pan. Before pouring the filling into the unbaked pie crust, brush the bottom and sides of the unbaked pie crust with lightly beaten egg white. Add the filling:
6 tart apples (Gala, granny smith etc. will do)
2 small boxes of raisins
1 butter stick
3/4 cups of sugar
cinnammon to taste
Peel and slice the apples into thin slices (like french fries). Squeeze the lemon juice and add to the apples. Add the sugar, cinnamon and raisins. Cut the butter stick into thin squares and add to the filling. Mix all these ingredients well. Pour the filling into the mold.
Cover the top of the top crust with a lightly beaten egg yolk using a small brush. Using a fork, poke holes to the crust so that steam can escape while baking. It’s especially nice if the holes are cut or poked in a decorative pattern.
Cook the pie at 350 degrees in a pre-heated oven for about 40 to 45 minutes.. If you are using store bought pie crusts, follow the directions on the package for baking times.
